Apple Oatmeal Muffins

How 'bout some breakfast? Or breakfast at 3 in the afternoon? Or as a midnight snack? These are good anytime.

Apple Oatmeal Muffins


1 1/2 cups white flour
1 1/2 cups whole wheat flour
1/2 cup brown sugar
2 tablespoons baking powder
1 1/2 teaspoons salt
2 cups oatmeal
2 eggs
2 cups milk
3 tablespoons oil
2 apples, grated
3 tablespoons brown sugar
1 teaspoon nutmeg
3 teaspoons cinammon

Mix together all the dry ingredients (white flour, wheat flour, brown sugar, baking powder, salt, and oatmeal) in a bowl. Then, add all the wet ingredients (eggs, milk, oil, and grated apple). Use a cheese grater to shred the apples up. Or, if you want, cut them up into little cubes with a knife. Mix it all together, but only until the mixture is barely blended; if you stir too long, you'll get tough muffins.

Heat the oven to 375 degrees. This makes about 24 muffins, so take two muffin tins, and spray with non-stick cooking spray. Spoon out the batter into the tins. Each one should be pretty full once you're done.

Now for the topping: in a mini-bowl, mix together the brown sugar, cinammon, and nutmeg. Sprinkle this over the tops of the uncooked muffins. Bake for 13-15 minutes.
