Secret Soup

I don't know how we started calling this Secret Soup. I think it's because it contains an ingrediant that you might not want to tell people about before they try it: peanut butter! But don't let that scare you off, the soup as a whole just gets thick and hearty because of it, with a little taste of nuts just to round out the flavor. Try it before you judge.

Secret Soup


This makes a largish pot of soup, enough for 7 or 8 servings. You can try to make it in a crock-pot, but I've never done it so it might turn out different.

2 tablespoons vegetable oil
1 large onion, cut into strings
3 cloves of garlic, crushed
2 teaspoons crushed red pepper
1 bell pepper, any color
5 carrots, cut into coins
3 medium-to-large potatos, cut like thin french fries
4 cups vegetable or chicken stock
5 tablespoons natural peanut butter, crunchy or smooth
1 can of corn
salt and pepper to taste
roughly chopped peanuts, walnuts, or cashews

Saute the onion and garlic with the oil in a large soup pot for 3-4 minutes. Add the crushed red pepper, and cook for about one more minute. To that mess, add in the bell peppers, carrots, and potatos. Cook for about 5 more minutes, stirring occasionally.

Add in the (undrained) can of corn, the stock, and the peanut butter. Mix it up well. Cover the pot and let the soup come to a boil. Once that happens, simmer for another 20 minutes or so, until the veggies are tender. Add salt and pepper.

When serving up the soup, top with a sprinkling of chopped nuts. And remember, don't tell anyone there's peanut butter in the soup, that's part of the secret.
