White Lasagna
Okay, so this is actually healthier than I made it sound like above. If you use whole-wheat noodles, lowfat or non-fat cream and cottage cheese, then the rest of it is mostly fresh veggies! So you can feel good about that.
1 package whole-wheat lasagne noodles
1 large tub (24 ounces) non-fat cottage cheese
1 pack (8 ounces) low-fat cream cheese
1 onion, minced
2 teaspoons basil
1 teaspoon garlic powder
1 package (10 ounces) frozen spinach
1 small yellow squash
2 small zucchinis
10 ounces shredded mozzarella cheese
3/4 cup grated parmesan cheese
1 can tomato sauce
4 roma tomatos
Cook the lasagna noodles according to package directions. Thaw the frozen spinach, and press it between paper towels to squeeze the extra water out. With a hand-blender, puree the cottage cheese until it is more-or-less smooth. Combine the cottage cheese, cream cheese, minced onion, basil, and garlic powder in a bowl. Slice the squash and zucchini into thin circles.
Okay, time to build lasagna! Spread a small layer of the cheese mixture across the bottom of a 9x13 glass dish, then lay down a layer of noodles. Spread another layer of cheese mixture, sliced squash and zucchini, then grated mozarrella, then spinach, then noodles again. Be sure to end with a top layer of noodles, with shredded mozarrella on top. Sprinkle all the parmesan over the top.
Heat the oven to 375 degrees, and bake for 50 minutes, uncovered.
Now, chop up the roma tomatos, and throw them into the can of tomato sauce. Heat it up over the stove or in the microwave.
When the lasagna is done, it should have nicely browned cheese on top, and it might be bubbly. Let it sit and cool for ten minutes or so for it to set up. To serve, scoop out chunks of it, and pour the tomato sauce over the top.
This is how we make it.... you can make any changes you like. Leave out the tomato sauce part, or add olives or mushrooms or artichoke hearts, or whatever. Just don't add any meat or tomato to the actual layers, otherwise, it won't be White Lasagna anymore.
