Asparagus Stir-Fry

Here's a main dish you can try out. We bring you.......

Asparagus Stir-Fry


This recipe makes enough for, like, 4 servings or so, but we finished off the whole thing in one dinner. Probably because we didn't serve anything else. So, if you have a big family or big appetite, plan accordingly.

1 cup white rice
2 cups water
2 tablespoons vegetable oil
1 pound of asparagus, cut into 2 inch peices
1 onion, chopped into big peices
4 large garlic cloves, chopped into big peices
1/3 cup chopped walnuts
1 cup chicken broth
1 1/2 tablespoons soy sauce
1 tablespoons corn starch

Prepare the rice by combining it with the water in a pot over high heat. Once it boils, reduce heat and cover. Check it periodically until it is as done as you like it.

Prepare the sauce by combining the chicken broth, soy sauce, and corn starch in a bowl. Mix it up and have it handy next to the stove. Also, get the veggies and nuts all ready and handy next to the stove. Stir-frying goes fast.

In a large wok, put the oil in and crank up the heat to high. Wait for the oil to start popping (you'll hear it, it doesn't take very long). Add the asparagus and onions and garlic. Stir constantly for 2 minutes. Then, add the walnuts and the sauce. Stir for another 4 minutes or so, or until the sauce starts to thicken up. Once that starts, reduce heat to low and simmer the whole thing until the veggies are as done as you like them.... it took us about 4 more minutes.

It you timed it right, the rice should be done pretty soon. Serve up plates with rice and slop some of the stir-fry on top. Deee-licious! Chopsticks are optional.
